Slow Food

I’m cooking, a lot, lately. For sometime now I’ve considered myself at least competent when it comes to cooking, yet its different now. Now I want to slow down and let the process last and not be obsessed with the short term, but rather to plan ahead and let flavor take the time it needs. I’m cooking these days.
